The plan: freeze sweet corn on Saturday
The weather: unseasonably cool but lovely
The crew: Our six and my mom, Arlin & Donna picked the corn and helped husk it
Notice Eden's jacket. It was a bit chilly in the shade but we were able to do all the kitchen work with the windows open. Wonderful!
Everyone has a job! Grab it, pass it, husk it . . . .
. . . haul it away. Who says sleds are just for winter? They loaded the husks on the sleds and then delivered them to the pigs who were more than happy to chow down on them.
Ephraim and Grandma Twyla cutting off the kernels. With several of us cutting off the cob, that step in the process went pretty fast. That and the fact that we only did over 120 ears on this date made it an easy day.

Once the corn has cooked a few minutes, we cool it down quickly with ice and a fan. Once cooled, it goes to the fridge to be chilled and then later packaged.
And because we were having such a great, easy day with corn we took a break for lunch and dived right in with some apples I had previously bought. Mom was willing to stay for a while and we cranked out the applesauce, too.
Here we are doing double duty--corn and applesauce.
Here are the boys doing the cranking with our food mill that makes making applesauce easy and fun. On this day we did 14 quarts of corn and 15 half gallons of applesauce! It was a productive day for sure, but just the beginning of filling the freezer with food to feed us in the coming year.
